Ingredients

  • 0.5 lb shrimp (finely chopped and patted dry)
  • 2 tsp cornstarch
  • 1 tsp sesame oil
  • 1 tsp soy sauce
  • 2 garlic (grated cloves (or 1/2 tsp garlic powder))
  • 2 tbsp green onion (chopped)
  • salt and black pepper (to taste)
  • 2 rice paper sheets (large sheets)
  • avocado oil spray (for cooking)
  • 2 tbsp plain Greek yogurt
  • 1 tbsp mayonnaise
  • 1 tsp Sriracha
  • 1 tsp honey
  • 0.5 tbsp lemon juice
  • 0.25 tsp garlic powder
  • salt (for the sauce, to taste)
  • sliced green onion (optional, for serving)
  • chili oil (chili crisp) (optional, for serving)
  • sesame seeds (optional, for serving)

Steps

    In a bowl, mix the chopped shrimp, cornstarch, sesame oil, soy sauce, garlic, green onion, salt, and pepper to prepare the filling.

    Dip a rice paper sheet in warm water for 3 to 5 seconds until it is pliable but still slightly firm.

    Place the shrimp filling onto the rice paper and roll it tightly, then cut the roll into bite-sized pieces.

    Generously spray the bites with avocado oil.

    Air fry at 390°F (200°C) for 14 to 16 minutes, flipping halfway through, until they are golden brown and crispy.

    While cooking, whisk together the Greek yogurt, mayonnaise, Sriracha, honey, lemon juice, garlic powder, and salt in a small bowl until smooth.

    Garnish the bites with green onions and sesame seeds, and serve immediately with the spicy yogurt sauce.

Notes

Tips: Dry the shrimp well before chopping to prevent the filling from being too wet. Do not over-soak the rice paper; it should remain a bit firm to make rolling easier. Spray generously with oil for a very crispy and blistered finish.
