Ingredients
- 1 cup blueberries (Fresh or frozen)
- 0.5 tbsp honey
- 1 tsp fresh lemon juice (Plus more to taste)
- sea salt (Pinch)
- 0.5 tbsp chia seeds (Helps naturally thicken the compote and adds fiber)
- 4 slices sourdough bread
- 2 tbsp cream cheese (Softened)
- 4 oz Brie or white cheddar (Choose Brie or white cheddar)
- 1.5 tbsp butter (Softened; source gives a range of 1–2 tbsp)
Steps
- 1
Add the blueberries, honey, lemon juice, and a pinch of sea salt to a small saucepan over medium heat.
- 2
Cook for 5–8 minutes, stirring occasionally and mashing some of the berries, until juicy and slightly thickened.
- 3
Remove the saucepan from the heat. Stir in the chia seeds, then let the compote sit for 5–10 minutes to thicken.
- 4
Taste the compote and adjust the lemon juice or honey if needed. Let it cool slightly before assembling.
- 5
Spread softened cream cheese on the inside of each bread slice.
- 6
Spread blueberry compote over the cream-cheese side of the bread, then layer with the Brie or white cheddar.
- 7
Top with the remaining bread slices, with the cream-cheese sides facing inward.
- 8
Spread softened butter over the outside of each sandwich.
- 9
Heat a skillet over medium-low heat. Cook the sandwiches for 3–4 minutes per side, pressing with a spatula, until the bread is golden and crisp and the cheese is melted.
- 10
Let the sandwiches rest for 1 minute, then slice each in half and serve warm while the cheese is gooey.
Notes
The source gives butter as a range of 1–2 tbsp; the listed quantity uses the midpoint. The cheese is an either/or choice, so nutrition is approximate. Prep time is estimated; the source does not specify it.
