Mango Ceviche
A refreshing and vibrant version of traditional ceviche that uses ripe but firm mango instead of fish, mixed with colorful bell peppers and a sweet and sour dressing.

Ingredients
- 1 Mango (ripe but firm, cut into cubes or strips)
- 0.5 Red bell pepper (finely chopped)
- 0.5 Yellow bell pepper (finely chopped)
- 0.5 Red onion (cut into thin julienne)
- Cilantro (a handful, finely chopped)
- 2 Lime (the juice)
- 3 tbsp Tomato sauce (ketchup type or base sauce)
- 2 tbsp Soy sauce
- 1 tbsp Hot sauce (optional)
- 1 tsp Salt
- 0.5 tsp Pepper

Prepare the vegetables and fruit: cut the mango into cubes or strips, finely chop the red and yellow bell peppers, and cut the red onion into thin julienne strips.

In a large bowl, combine the mango, bell peppers, red onion, and chopped cilantro.

Add the juice of the 2 limes to the mixture.

Stir in the 3 tbsp of tomato sauce, 2 tbsp of soy sauce, and 1 tbsp of hot sauce if you choose to use it.

Season with salt and pepper.

Mix everything gently so that the flavors blend well without breaking apart the mango.

Notes
For best results, ensure the mango is not too soft so that it holds its shape when mixing. You can serve it with saltine crackers or plantain chips.
