Ingredients
- 0.333 cup milk
- 1 egg
- 1 tbsp garlic powder
- 1 tbsp smoked paprika (Regular paprika may be substituted.)
- 2 tsp onion powder (Half an onion may be used instead; onion powder is used in the source because one child does not like onion.)
- 2 tbsp honey (Used in the casserole; additional honey may optionally be spread on top after cooking.)
- 1 box Jiffy corn muffin mix (One standard box, approximately 8.5 oz (241 g).)
- 1 cup shredded cheddar cheese
- 8 hot dogs (Use one eight-pack; cut into bite-sized pieces.)
- butter (Optional, for spreading over the finished casserole.)
- honey (Optional, for drizzling or spreading over the finished casserole.)
Steps
- 1
Add the milk, egg, garlic powder, smoked paprika or regular paprika, onion powder, and honey to the crockpot. The egg may be cracked directly into the crockpot, taking care to avoid shell fragments.
- 2
Add the Jiffy corn muffin mix and shredded cheddar cheese to the crockpot.
- 3
Cut all eight hot dogs into bite-sized pieces, then add them to the crockpot.
- 4
Mix everything thoroughly, making sure the corn mix is incorporated well and no dry clumps remain.
- 5
Press the mixture down into an even, flat layer in the crockpot.
- 6
Lay paper towels across the top of the crockpot, using enough to cover the surface without allowing a large amount to hang over the sides. The paper towels absorb moisture so the cornbread can cook through and brown.
- 7
Cover the crockpot with its lid. If the paper towels become soaked during cooking, replace them with dry paper towels.
- 8
Cook on high for 2 to 3 hours, or on low for 4 to 5 hours, until the casserole is cooked through and the cornbread has browned.
- 9
When the casserole is finished, optionally spread butter, honey, or both over the top before serving.
Notes
The source says the recipe can be doubled. Cooking time is given as 2–3 hours on high or 4–5 hours on low; the listed cook and total times use the shorter high-setting time. The source does not specify the crockpot size or an exact doneness temperature.
