Ingredients
- 0.5 cup chicken broth
- 1 cup heavy whipping cream
- 2 cup shredded cheddar cheese
- 0.5 cup Parmesan cheese
- minced garlic (One heaping spoonful, plus a little more to taste)
- 2 tsp smoked paprika (Regular paprika may be used instead)
- 1 tsp pepper (Add more seasoning if desired)
- 1 tsp Old Bay seasoning (Add more if desired)
- 2 boneless chicken breasts (Cubed into bite-size pieces)
- 1 box Cheddar Bay biscuit mix (Follow the box instructions; reserve the included garlic-herb seasoning packet for the topping)
- 0.75 cup cold water (For the biscuit mixture)
- 0.5 cup shredded cheddar cheese (For the biscuit mixture)
- 0.25 cup butter (Melted for brushing over the cooked biscuits)
- garlic-herb seasoning (The seasoning packet included with the Cheddar Bay biscuit mix; reserved for the butter topping)
Steps
- 1
Add the chicken broth, heavy whipping cream, 2 cups of shredded cheddar cheese, Parmesan cheese, minced garlic, smoked paprika (or regular paprika), pepper, and Old Bay seasoning to the crockpot.
- 2
Cube the two chicken breasts into bite-size pieces, using kitchen shears or a knife, and add the chicken to the crockpot mixture.
- 3
Stir the chicken and creamy cheese mixture together. Optional vegetables may be added, but the source leaves the dish plain.
- 4
In a separate bowl, prepare the Cheddar Bay biscuits according to the instructions on the box, reserving the included garlic-herb seasoning packet for later.
- 5
Stir 3/4 cup cold water and 1/2 cup shredded cheddar cheese into the biscuit mixture.
- 6
Dollop the biscuit mixture evenly over the top of the chicken mixture in the crockpot.
- 7
Lay paper towels over the top of the crockpot before putting on the lid. Use enough to cover the top without leaving a large amount hanging over the sides; when the lid is placed, the towels should fold inward and should not touch the outside of the crockpot shell.
- 8
Cook on high for 2 to 3 hours or on low for 5 to 6 hours. If the paper towels become soaked during cooking, change them. If they cannot be changed immediately, change them 20 to 30 minutes before serving.
- 9
When the chicken and biscuits are finished, melt 1/4 cup butter in the microwave and stir in the reserved garlic-herb seasoning packet.
- 10
Brush the melted seasoned butter over the tops of the biscuits, then serve the Cheddar Bay chicken.
Notes
The source does not specify the biscuit-box size, the exact amount of garlic, or a precise doneness check for the chicken. Add more seasoning if desired. The paper-towel method is intended to absorb moisture so the biscuits cook through.
