Ingredients
- 250 g cherry tomatoes (halved)
- salt (to taste)
- dried oregano (to taste)
- black pepper (to taste)
- olive oil spray (for spraying)
- 100 ml extra virgin olive oil (enough to cover in the jar)

Cut the cherry tomatoes in half with a sharp knife.

Place the tomatoes in the air fryer basket or on a baking sheet, ensuring they are placed cut-side up.

Season the tomatoes by adding salt, oregano, and black pepper to taste.

Apply a light spray of olive oil over the seasoned tomatoes.

Cook in the air fryer or in a preheated oven at 130°C for an hour and a half.

Carefully remove the tomatoes and transfer them to a clean glass jar.

Completely cover the tomatoes with extra virgin olive oil for preservation.
Notes
It is recommended to store the jar in the refrigerator. The leftover oil will be infused with the flavor of the tomatoes and spices, making it excellent for dressing salads.
