Ingredients

  • 370 g all-purpose flour (00 flour)
  • 370 g Greek yogurt (for the dough)
  • 2 g salt (for the dough)
  • 10 ml extra virgin olive oil (for the dough)
  • 6 g instant yeast (sifted)
  • 2 pickles (finely chopped)
  • 60 g light mayonnaise
  • 90 g Greek yogurt (for the sauce)
  • 1 g salt (for the sauce)
  • sweet paprika (to taste)
  • garlic powder (to taste)
  • 1 tsp meat extract or bouillon powder (for the sauce)
  • 30 g tomato paste
  • 20 g mustard
  • 400 g extra lean ground beef (very lean)
  • 150 ml beef broth
  • 1 white onion (chopped)
  • 150 g grated light protein cheese (low-fat)
  • extra virgin olive oil spray (for cooking)

Steps

    In a large bowl, mix the flour, Greek yogurt, salt, olive oil, and sifted instant yeast with a spoon.

    Knead the mixture by hand for about 10 minutes until a smooth dough ball forms.

    Cover the dough with plastic wrap and let it rest for 30 minutes.

    While the dough rests, prepare the sauce by finely chopping the pickles and mixing them in a bowl with light mayo, Greek yogurt, salt, paprika, garlic powder, meat extract, tomato paste, and mustard.

    Heat a drizzle of spray oil in a pan over high heat. Add the lean ground meat and cook until a nice crust forms.

    Add the chopped white onion and the meat broth to the pan. Reduce heat to medium and cook until the liquid has evaporated, ensuring the meat remains moist and not dry.

    Turn off the heat, add the prepared sauce to the meat mixture, and mix well.

    Divide the rested dough into 8 equal balls. On a floured surface, flatten each ball with a rolling pin into a thin circle.

    Place a portion of the meat and sauce mixture in the center of each dough circle, top with the grated protein cheese, and fold the edges inward to seal the bun completely.

    Heat a pan over medium heat and place the buns inside. Cover with a lid and cook, turning occasionally.

    Once the buns are cooked through and golden, turn the heat to maximum for about 30 seconds to make them extra crispy, being careful not to burn them.

    Briefly sear the sides of the buns before removing them from the heat.

Notes
