Ingredients

  • 1 cup Low-fat cottage cheese
  • 2 Hard-boiled eggs (Large, peeled)
  • 0.333 cup Parmesan cheese (Grated)
  • 0.75 cup Milk (Use any milk you prefer)
  • 0.5 tsp Cornstarch (Optional; helps thicken)
  • 1 tsp Garlic powder
  • 0.5 tsp Italian seasoning
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 120 g Cooked edamame pasta (Optional; the creator used this pasta. Regular pasta can also be used, with chicken breast added to taste.)
  • Pasta cooking water (A splash, only if the sauce needs thinning)

    Add the low-fat cottage cheese, hard-boiled eggs, grated Parmesan, milk, optional cornstarch, garlic powder, Italian seasoning, salt, and black pepper to a blender.

    Blend on high speed until completely smooth, homogeneous, and creamy, with no visible lumps.

    Pour the blended mixture into a saucepan and heat over medium-low heat.

    Cook for 3-5 minutes, stirring frequently, until the sauce is hot and slightly thickened. Do not let it boil, as this could affect the sauce’s texture.

    Add the sauce to the cooked pasta and stir until fully coated.

    If the sauce is too thick, add a splash of pasta cooking water and stir until the desired consistency is reached. The creator recommends starting with a serving of about 120 g of edamame pasta, especially if you have not eaten it before, as it may cause digestive discomfort for some people.

Notes

The quantities and macronutrients listed correspond to the entire sauce: approximately 560 kcal, 60 g protein, 20 g carbohydrates, and 27 g fat, according to the post. The edamame pasta and regular pasta are not included in these values. Chicken breast can be added to increase the protein content further. Do not boil the sauce.
