Crispy Garlic & Herb Roasted Potatoes

Ingredients
- 2 lb Yukon Gold potatoes (peeled and cut into 1-inch chunks)
- Kosher salt (for boiling water and seasoning)
- 0.25 cup High-heat cooking oil (such as Graza Frizzle or avocado oil)
- 2 tbsp Extra virgin olive oil (for finishing flavor)
- 4 Garlic cloves (minced)
- 1 tbsp Fresh rosemary (finely chopped)
- 1 tsp Fresh thyme (leaves removed from stems)
- Black pepper (to taste)

Preheat your oven to 425°F (220°C).

Place the potato chunks in a large pot and cover with cold water by at least an inch. Add a generous pinch of salt.

Bring the water to a boil and cook the potatoes for about 8-10 minutes, or until the outsides are softened but the centers are still firm.

Drain the potatoes and let them steam dry in the colander for a minute. Shake the colander vigorously to roughen up the edges of the potatoes; this creates more surface area for maximum crispiness.

Pour the high-heat cooking oil onto a large rimmed baking sheet and place it in the oven for 5 minutes to get the oil shimmering hot.

Carefully remove the hot baking sheet from the oven and add the potatoes, spreading them into a single layer. Toss gently to coat in the hot oil.

Roast for 20 minutes, then flip the potatoes with a spatula.

Continue roasting for another 15-20 minutes until the potatoes are deep golden brown and very crispy.

In the final 5 minutes of roasting, sprinkle the minced garlic, rosemary, and thyme over the potatoes and toss to combine.

Remove from the oven, drizzle with the extra virgin olive oil, and season with additional salt and black pepper to taste before serving.
Notes
Par-boiling the potatoes and then shaking them to roughen the edges is the secret to the 'glass-like' crispy exterior. Using a high-heat oil like Graza Frizzle prevents the oil from smoking at high roasting temperatures.
