Ingredients

  • 4 cup all-purpose flour (plus extra for dusting)
  • 0.5 cup sugar
  • 1 tsp salt
  • 1 cup warm milk
  • 1 tbsp vanilla extract
  • 2.25 tsp active dry yeast
  • 2 eggs (large)
  • 4 tbsp unsalted butter (softened)
  • 1 cup chocolate (half milk chocolate chips and half dark baking chocolate bar)
  • 4 tbsp butter (for filling)
  • 0.333 cup powdered sugar
  • 1 egg (for egg wash)
  • citrus simple syrup (for glazing)
  • pistachios (crushed, for topping)

Steps

    In a large mixing bowl, combine the 4 cups of all-purpose flour, 1/2 cup sugar, and 1 teaspoon of salt.

    In a separate bowl, combine 1 cup warm milk, 1 tablespoon vanilla extract, and 2 1/4 teaspoons active dry yeast. Let it sit to bloom for 8-10 minutes until foamy.

    Add the bloomed yeast mixture and 2 large eggs to the dry ingredients. Mix until a rough dough forms.

    Knead the dough on a floured surface or in a stand mixer. Gradually add 4 tablespoons of softened butter, one tablespoon at a time, until the butter is fully incorporated and the dough is smooth.

    Continue kneading for 8-10 minutes. Perform the 'stretch method' (windowpane test); if the dough stretches thin without breaking, it is ready.

    Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for about 1 hour, or until doubled in size.

    Prepare the chocolate filling by melting 1 cup of chocolate (chips and bar) with 4 tablespoons of butter, then stir in 1/3 cup powdered sugar until smooth.

    Once the dough has risen, punch it down to release air. Transfer to a floured surface and roll out into an oblong rectangle about 1/2 inch thick.

    Cut the large rectangle into 12-14 equal pieces. Roll out each individual portion into a smaller rectangle.
