Ingredients

  • 200 g potato (peeled)
  • 3 eggs
  • 100 g chicken breast (diced or shredded)
  • 40 g onion (diced)
  • 75 g cherry tomatoes (halved)
  • 25 g low fat grated mozzarella
  • salt (to taste)
  • black pepper (to taste; referred to as African American pepper in source)
  • paprika (to taste)
  • garlic powder (to taste)

Steps

    Peel the potato and place it in the microwave for approximately 8 minutes until it is soft and cooked through.

    Place the cooked potato into the base of an ovenproof dish and mash it down to form an even layer.

    In a separate mixing bowl, crack the 3 eggs and beat them.

    Add the diced chicken breast, diced onion, halved cherry tomatoes, and grated mozzarella to the eggs.

    Season the mixture with salt, black pepper, paprika, and garlic powder, then mix everything together thoroughly.

    Pour the egg and chicken mixture over the mashed potato base in the ovenproof dish and level it out with a spoon.

Notes

The author suggests serving this with sweet chili jam or tomato ketchup. The tin foil method is recommended if you find the top of your bakes usually burn before the center is set.
