Ingredients

  • 30 g cinnamon cookies (cinnamon cookies (e.g., Kanelly's))
  • 1 Medjool date (large Medjool date)
  • 200 g low-fat vanilla quark (low-fat vanilla quark)
  • 20 g sugar substitute (sugar substitute (e.g., Steviala Kristal Sweet))
  • 2 gelatin sheets (gelatin sheets)
  • 2 tsp cinnamon (cinnamon, plus extra for garnish)

Steps

  1. 1

Place the gelatin sheets in a bowl of cold water and let them soak until soft.

  2. 2

Meanwhile, place the cinnamon cookies in a food processor and pulse until they become fine crumbs.

  3. 3

Add the Medjool date to the food processor and mix again until the mixture becomes sticky and cohesive.

  4. 4

Press the cookie-date mixture into the bottom of a small single-serving springform pan (approximately 12cm in diameter) to form the crust.

  5. 5

Remove the gelatin sheets from the water and squeeze out any excess liquid.

  6. 6

In a small saucepan, combine the quark, sugar substitute, cinnamon, and the soaked gelatin sheets.

  7. 7

Place the saucepan over low heat and stir constantly until the mixture is smooth and the gelatin has completely dissolved. Do not let it boil.

  8. 8

Pour the quark mixture over the prepared cookie base in the pan.

  9. 9

Place the cake in the refrigerator and let it set for at least 4 hours.

  10. 10

Once set, sprinkle with extra cinnamon before serving.
