Ingredients

  • 300 g Shrimp (cleaned and deveined)
  • Salt (to taste, for seasoning shrimp)
  • Black pepper (to taste, for seasoning shrimp)
  • Paprika (to taste, for seasoning shrimp)
  • 1 Garlic clove (minced)
  • 1 tsp Ginger (grated)
  • 2 Scallions (white and green parts separated)
  • 1 Carrot (finely diced)
  • 2 Eggs
  • 2 cup Cooked rice (preferably day-old rice)
  • 3 tbsp Soy sauce
  • 1 tbsp Cooking oil (for frying)

Steps

    Season the shrimp with salt, pepper, and paprika.

    Heat oil in a skillet or wok over medium-high heat. Add the shrimp and cook until pink and opaque. Once cooked, remove the shrimp from the pan and set aside.

    In the same skillet, sauté the minced garlic, grated ginger, the white parts of the sliced scallions, and the diced carrot until fragrant and slightly softened.

    Push the vegetables to one side of the pan and crack the two eggs into the empty space. Scramble the eggs until fully cooked.

    Integrate the cooked eggs with the sautéed vegetables.

    Add the cooked rice to the pan. It is highly recommended to use rice from the previous day for a better texture.

    Pour in the soy sauce and return the cooked shrimp to the pan.

    Toss and stir everything together until well integrated and heated through.

    Garnish with the green parts of the scallions and serve immediately.

Notes

Using day-old rice is critical as it is drier and prevents the fried rice from becoming mushy. You can substitute shrimp with any protein of your choice like chicken or tofu.
