Ingredients

  • 1 lb salmon (Cut into cubes)
  • 1 tbsp Primal Kitchen avocado oil (For coating the salmon)
  • salt and pepper (To taste; for the salmon and salsa)
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 2 mango (Cubed)
  • 1.5 cup red cabbage
  • 1.5 cup green cabbage
  • 0.25 red onion (Medium onion; thinly sliced)
  • 0.25 cup cilantro (Chopped, plus extra for garnish if desired)
  • 0.5 lime juice (Juice of 1/2 lime)
  • 1 tbsp honey
  • 2 cup jasmine rice (Washed and rinsed)
  • 14 oz coconut milk
  • 0.5 cup water
  • 1 bay leaf
  • 1 tbsp Primal Kitchen olive oil (For the rice cooker, to help prevent sticking)
  • avocado slices (Optional topping; amount not specified)
  • Primal Kitchen YUM YUM Sauce (For drizzling; amount not specified)

Steps

  1. 1

Cut the salmon into thick cubes. Coat the cubes with the avocado oil, then season with salt and pepper, smoked paprika, garlic powder, and onion powder.

  2. 2

For the oven method, arrange the seasoned salmon cubes on a parchment-lined sheet pan and bake at 400°F for 9–12 minutes. Alternatively, place them in an air-fryer basket and cook at 385°F for 8–10 minutes, until golden and cooked through.

  3. 3

Make the mango salsa by combining the cubed mango, red cabbage, green cabbage, thinly sliced red onion, and salt and pepper in a bowl.

  4. 4

Mix the chopped cilantro, lime juice, and honey into the cabbage and mango mixture. Chill the salsa until ready to serve.

  5. 5

Add the rinsed jasmine rice, coconut milk, water, salt, and bay leaf to a rice cooker. Drizzle in the olive oil, stir slightly, and set the cooker to cook.

  6. 6

When the rice is finished, let it sit for a few minutes before fluffing.

  7. 7

Spoon the fluffy coconut rice into bowls. Top with the cooked salmon and a generous helping of mango salsa.

  8. 8

Finish with optional avocado slices, a drizzle of YUM YUM Sauce, and extra chopped cilantro if desired.

Notes

The source gives both oven and air-fryer methods. The amount of optional avocado, YUM YUM Sauce, and extra cilantro is not specified. The transcript mentions two bay leaves, but the authored recipe lists one; the authored list was followed.
