Ingredients

  • 1 lb flank steak (cut into 1/2 inch strips)
  • salt (to taste)
  • black pepper (to taste)
  • 1 tbsp corn starch
  • 0.5 tsp garlic powder
  • 0.5 cup soy sauce
  • 0.25 cup seasoned rice vinegar
  • 1 tbsp sesame oil (divided (used in marinade and kimchi))
  • 0.5 white onion (julienned)
  • 3 cloves garlic (minced)
  • 1 tsp fresh ginger (freshly grated)
  • 3 tbsp brown sugar
  • 2 russet potato (medium, cut into fry shape)
  • 2 tsp avocado oil
  • 0.5 cup light mayo
  • 1.5 tbsp sriracha (1-2 tbsp to taste)
  • 0.75 cup kimchi
  • 1 tsp swerve granulated sugar (or other calorie-free sweetener)
  • 1 tsp sesame oil (for sautéing kimchi)
  • 0.5 cup low fat mozzarella cheese (shredded)
  • cilantro (for garnish)
  • green onions (for garnish)

Steps

    Place the 1 lb of flank steak strips in a bowl. Season with salt, pepper, 1 tbsp corn starch, and 1/2 tsp garlic powder. Toss to coat.

    In a separate bowl or jar, combine 1/2 cup soy sauce, 1/4 cup seasoned rice vinegar, 1 tbsp sesame oil, 1/2 julienned white onion, 3 minced garlic cloves, 1 tsp grated ginger, and 3 tbsp brown sugar. Whisk to combine.

    Pour the marinade over the seasoned steak. Let it marinate for at least 30 minutes, or overnight for the best results.

    Preheat your air fryer to 400°F (200°C).

    Toss the cut russet potato fries with salt and 2 tsp avocado oil. Place them in the air fryer basket and cook for 14-17 minutes, flipping them halfway through, until crispy.

    While the fries cook, prepare the sriracha mayo by mixing 1/2 cup light mayo with 1-2 tablespoons of sriracha in a small bowl. Set aside.

    In a small pan over high heat, combine 3/4 cup kimchi, 1 tsp swerve sugar, and 1 tsp sesame oil. Sauté for 4 minutes until slightly caramelized.

    Preheat a large pan to medium-high heat. Add the beef and its marinade. Cook for 7-8 minutes, or until the sauce thickens and starts sticking to the beef, turning it a dark brown color.

    To assemble, place the fries on a plate or in a bowl. Top with the cooked steak and low fat mozzarella cheese.

    Microwave the assembled fries for 30 seconds to 1 minute until the cheese is melted.

    Top with the sautéed kimchi, sriracha mayo, fresh cilantro, and green onions. Serve immediately.

Notes

For best results, marinate the steak overnight. You can substitute the Swerve sugar with regular granulated sugar if desired.
