- black pepper (to taste)
- 1 tsp garlic powder
- 1 tsp chili powder
- 1 tsp paprika
- 0.25 tsp cumin
- 1 tbsp olive oil (to marinate)
- avocado oil spray (to cook)
- 2 cup corn
- 0.25 cup light mayonnaise
- 0.25 cup cotija cheese
- 1 lime (juice and zest)
- 1 jalapeño (finely diced)
- 3 tbsp cilantro (chopped)
- 1 avocado (cubed)
- 1 tsp Tajin (optional seasoning)
- 3 cup cooked rice (for serving (1 cup per bowl))

Cut the chicken breasts into small, even cubes.

In a bowl, combine the cubed chicken with salt, pepper, garlic powder, chili powder, paprika, cumin, and 1 tablespoon of olive oil. Toss until the chicken is thoroughly coated.

Heat a pan over medium heat and spray with avocado oil.

Add the chicken to the pan and sear for a few minutes per side until golden brown and cooked through.

In a separate mixing bowl, prepare the street corn salsa by combining the corn, light mayonnaise, cotija cheese, lime juice, lime zest, finely diced jalapeño, and chopped cilantro.
