Ingredients
- 1 cup cottage cheese (blended smooth)
- 1 cup almond flour
- 1.25 scoops vanilla protein powder (1-1.5 scoops; use more if mixture is too wet)
- 0.5 cup peanut butter
- 2 tbsp maple syrup (add more if you want it sweeter)
- 1 tsp vanilla extract
- salt (pinch)
- 0.5 cup chocolate chips
- 1 tsp coconut oil

Place the cottage cheese in a blender or food processor and blend until it is completely smooth with no lumps.

In a large mixing bowl, combine the blended cottage cheese, peanut butter, maple syrup, and vanilla extract. Mix until well incorporated.

Add the almond flour, vanilla protein powder, and a pinch of salt to the wet mixture.

Mix the ingredients until a thick dough forms. The dough should be soft but hold its shape when pressed. If the mixture feels too wet, add a bit more almond flour or protein powder until it reaches a thick, spreadable consistency.

Line a pan or container with parchment paper and press the dough mixture evenly into the bottom.

In a small microwave-safe bowl or using a double boiler, melt the chocolate chips together with the coconut oil until smooth.

Spread the melted chocolate mixture evenly over the top of the dough in the pan.

Place the pan in the fridge or freezer for 20–30 minutes until the chocolate has set and the base is firm.

Notes
Store the squares in the fridge to maintain their texture. They are high in protein and low in sugar, making them a great meal-prep snack for the week.
