Cottage Cheese Protein Peanut Butter Balls
A high-protein, low-sugar snack that tastes like a Reese's copycat. These peanut butter balls are made with blended cottage cheese and almond flour for a rich, fudgy texture without refined sugar.

Ingredients
- 1 cup cottage cheese (blended until smooth)
- 2 tbsp maple syrup (or honey)
- 1.5 cups almond flour
- 0.5 cup protein powder (vanilla or unflavored recommended)
- 0.25 cup peanut butter (can use up to 1/2 cup for more flavor; or use PB powder for lower fat)
- 0.5 tsp salt
- 1 cup dark chocolate chips
- 1 tsp coconut oil

Place the cottage cheese in a blender or food processor and blend until completely smooth and no curds remain.

In a mixing bowl, combine the blended cottage cheese, maple syrup (or honey), peanut butter (or PB powder), almond flour, protein powder, and salt.

Mix the ingredients thoroughly until a thick and smooth dough forms.

If the mixture is too sticky to handle, place it in the freezer for about 10 minutes to harden, or add a small amount of extra almond flour or protein powder.

Roll the mixture into bite-sized balls and place them on a tray.

Place the balls in the freezer to firm up while you prepare the coating.

In a small microwave-safe bowl, combine the dark chocolate chips and coconut oil. Melt in 30-second intervals, stirring in between, until smooth.

Pour the melted chocolate over the balls or dip each ball into the chocolate to coat.

Place the coated balls back in the fridge for about 30 minutes to allow the chocolate to set.
Notes
If the mixture is too sticky to roll, chilling it in the freezer for 10 minutes is the best fix. For a lower-fat version, substitute the peanut butter with peanut butter powder. These are best stored in the fridge or freezer.
