Ingredients
- 300 g Ground beef (Ideally 80/20)
- 2 Brioche burger buns
- 4 slices Cheddar cheese
- Salt (To taste; for the beef)
- Black pepper (To taste; for the beef and pickle sauce)
- Oil (For frying; lightly oil the skillet)
- 1 Onion (Large, thinly sliced)
- 15 g Butter (For the onions)
- 1 tsp Balsamic vinegar
- 0.5 tsp Brown sugar
- Salt (A pinch; for the onions)
- 30 g Butter (Softened, for the garlic butter buns)
- 2 cloves Garlic (Minced)
- 1 tbsp Fresh parsley (Chopped)
- Salt (A pinch; for the garlic butter)
- 40 g Mayonnaise
- 1 tsp Dijon mustard
- 1 tbsp Pickles (Finely chopped)
- 1 tsp Pickle juice
Steps
- 1
Melt the 15 g butter in a pan over medium-low heat. Add the thinly sliced onion, ½ tsp brown sugar, and a pinch of salt. Cook for 15–20 minutes, stirring as needed, until the onion is soft and golden.
- 2
Stir in 1 tsp balsamic vinegar and cook for 1 minute more. Set the caramelized onions aside.
- 3
Mix the softened 30 g butter with the minced garlic, chopped parsley, and a pinch of salt until combined.
- 4
Spread the garlic butter over the cut sides of the brioche buns. Toast them in a pan until golden and crispy.
- 5
Mix the mayonnaise, Dijon mustard, finely chopped pickles, pickle juice, and black pepper to taste until combined.
- 6
Divide the ground beef into 4 equal balls. Heat a lightly oiled skillet over medium-high heat.
- 7
Add the beef balls to the skillet and immediately smash each into a thin patty. Season with salt and black pepper.
- 8
Cook the patties for 2–3 minutes, until deeply browned, then flip them. Add one slice of cheddar to each patty and cook for another 1–2 minutes, until the cheese melts and the beef is cooked through.
- 9
Spread the creamy pickle sauce onto the toasted buns. Stack two cheesy patties on each bun, add the balsamic caramelized onions, and close the burgers.
- 10
Serve immediately while the buns are crispy and the cheese is melted.
