Ingredients

  • 4 tbsp PB2 or powdered peanut butter
  • 0.75 cup Rolled oats
  • 0.25 cup Unsweetened applesauce
  • 0.25 cup All-purpose flour
  • 4 Egg whites (Approximately 4 egg whites)
  • 2 tbsp Almond or peanut butter (Use almond or peanut butter)
  • 1 tsp Baking powder
  • 3 scoops Vanilla protein powder (For the cookie dough)
  • 0.25 cup Low-fat cream cheese (Can be substituted with vanilla labneh)
  • 0.25 cup Plain nonfat Greek yogurt (Vanilla YoPro yogurt can also be used)
  • 2 scoops Vanilla protein powder (For the filling)
  • Vanilla extract (A splash)

Steps

    Preheat the oven to 180 °C (355 °F). Line a baking sheet with parchment paper or a silicone baking mat to prevent the cookies from sticking.

    In a large bowl, combine the PB2, rolled oats, applesauce, flour, egg whites, almond or peanut butter, baking powder, and the 3 scoops of vanilla protein powder.

    Mix all the dough ingredients until you have a thick, uniform mixture with no pockets of flour or dry protein powder. The dough should be scoopable and hold its shape.

    Divide the dough into 12 portions on the prepared baking sheet, leaving space between them. Shape them into discs or flatten them slightly with the back of a spoon.

    Bake for 5-7 minutes, until the cookies are lightly golden. Do not overbake them: they should remain soft so they can be assembled into sandwiches.

    While the cookies are baking, place the low-fat cream cheese, nonfat Greek yogurt, the 2 scoops of vanilla protein powder, and the vanilla extract in another bowl.

    Mix the filling until completely smooth and creamy, with no lumps of cream cheese or protein powder.

    Allow the cookies to cool enough to handle. Spread a portion of the filling over the flat side of 6 cookies.

    Place the remaining 6 cookies on top of the filling and press gently to form 6 sandwiches. Serve immediately or refrigerate before serving so the filling becomes firmer.
