Ingredients

  • 1 tsp mustard seeds (rai)
  • 1 tsp nigella seeds (kalonji)
  • 1 tsp fenugreek seeds
  • 2 tbsp cumin seeds (zeera)
  • 2 tbsp coriander seeds
  • 1 tbsp fennel seeds (saunf)
  • 4 whole red chillies (3-4 pieces)
  • 4 chicken thighs (3-4 pieces, skinless)
  • 3 tbsp yogurt (2-3 tbsp)
  • 2 tbsp ginger garlic paste
  • salt (according to taste)
  • 1 tbsp Kashmiri red chili powder
  • 1 tbsp red chili flakes
  • 3 tbsp homemade achari masala (heaped tablespoons; use the blend prepared in the first section)
  • 3 tbsp lemon juice (2-3 tbsp)
  • red food color (a pinch)

Steps

    Prepare the Achari Masala by combining the mustard seeds, nigella seeds, fenugreek seeds, cumin seeds (zeera), coriander seeds, fennel seeds, and whole red chillies. Grind them together into a coarse or fine powder as preferred.

    In a large mixing bowl, prepare the marinade by combining 2-3 tablespoons of yogurt, 2 tablespoons of ginger garlic paste, salt to taste, 1 tablespoon of Kashmiri red chili powder, and 1 tablespoon of red chili flakes.

    Add 3 heaped tablespoons of the freshly prepared homemade achari masala to the marinade mixture.

    Add 2-3 tablespoons of lemon juice and a pinch of red food coloring to the bowl. Mix all the marinade ingredients thoroughly until well combined.

    Add the chicken thighs to the bowl and coat them thoroughly with the marinade, ensuring the spices reach all parts of the meat.

    To cook in an air fryer: Preheat the air fryer to 170°C (340°F). Place the chicken thighs in the basket and cook for 15 minutes until fully cooked and slightly charred.

    Alternatively, to cook on the stovetop: Place the chicken in a pan over low to medium flame and cook for 15 minutes, turning occasionally, until the chicken is tender and the juices run clear.

Notes

The red food coloring is optional and used primarily for a vibrant restaurant-style appearance. If you have leftover achari masala, it can be stored in an airtight container for future use.
