Classic Garlic Mayo Cheese Balls

Ingredients
- 3 potatoes (boiled and mashed)
- 1 tsp salt (for potato mixture)
- 1 tsp black pepper
- 2 tsp red chilli powder (for potato mixture)
- 1 tsp onion powder
- 1 tsp crushed red chilli
- 300 g chicken (finely chopped or shredded)
- 0.5 tsp salt (for chicken filling)
- 1 tsp paprika
- 1 tsp red chilli powder (for chicken filling)
- 1 tsp garlic powder
- 1 tbsp hot sauce
- 2 tbsp garlic mayo (Young's brand recommended)
- mozzarella cheese (cubed or shredded for stuffing)
- 1 egg (beaten for coating)
- 1 cup bread crumbs (for coating)
- 0.5 cup all purpose flour (for coating)
- oil (for deep frying)

In a large mixing bowl, combine the boiled and mashed potatoes with 1 tsp salt, black pepper, 2 tsp red chilli powder, onion powder, and crushed red chilli. Mix thoroughly until the spices are evenly distributed and the potato dough is smooth.

Prepare the chicken filling by mixing the 300g cooked chicken with 1/2 tsp salt, paprika, 1 tsp red chilli powder, garlic powder, hot sauce, and 2 tbsp garlic mayo. Stir until the chicken is well-coated and the mixture is creamy.

Take a small portion of the potato mixture and flatten it into a disc in the palm of your hand.

Place a spoonful of the chicken filling and a piece of cheese in the center of the potato disc.

Carefully fold the edges of the potato over the filling and roll it between your palms to form a smooth, round ball. Ensure there are no cracks where cheese could leak out.

Dredge each ball first in all-purpose flour, then dip into the beaten egg, and finally roll in bread crumbs until fully coated.

Heat oil in a deep pan or wok over medium heat. Fry the cheese balls in batches until they are deep golden brown and crispy on all sides.

Remove from the oil and drain on paper towels. Serve hot with extra garlic mayo or your favorite dip.
Notes
Ensure the potato balls are sealed tightly to prevent the cheese from leaking out during frying. If the potato mixture is too sticky, lightly grease your hands with oil.
