One Pot Chicken Tikka Lasagna

A simplified, lazy-day version of lasagna made in a single pot. This recipe features a fusion twist with tikka masala seasoning and a creamy homemade white sauce.

Ingredients

  • 400 g chicken (boneless, cut into small pieces)
  • 6 lasagna pasta sheets (broken into smaller pieces)
  • 1 small onion (finely chopped)
  • 1 tbsp garlic paste
  • 2.5 tomatoes (pureed (2-3 tomatoes))
  • 1 tbsp tomato paste
  • 1 tsp salt (for chicken mixture)
  • 1 tsp black pepper (for chicken mixture)
  • 1 tsp paprika
  • 1 tsp tikka masala powder
  • 1 tsp onion powder
  • 2 tsp sugar
  • oregano (to taste)
  • 2 tbsp all purpose flour (for white sauce)
  • 2 tbsp ghee or butter (for white sauce)
  • 1 cup milk (for white sauce)
  • 0.5 tsp salt (for white sauce)
  • 0.5 tsp black pepper (for white sauce)

Steps

    Prepare the white sauce: In a small saucepan over medium heat, melt 2 tablespoons of ghee or butter. Whisk in 2 tablespoons of all-purpose flour and cook for 1 minute until bubbly. Gradually whisk in 1 cup of milk until smooth. Season with 1/2 teaspoon salt and 1/2 teaspoon black pepper. Continue cooking and stirring until the sauce thickens. Set aside.

    In a large pot or deep skillet, sauté the chopped small onion with a bit of oil until translucent. Add 1 tablespoon of garlic paste and sauté until fragrant.

    Add 400 grams of chicken pieces to the pot. Season with 1 teaspoon salt, 1 teaspoon black pepper, 1 teaspoon paprika, 1 teaspoon tikka masala, and 1 teaspoon onion powder. Cook until the chicken is browned and mostly cooked through.

    Stir in the tomato puree (from 2-3 tomatoes), 1 tablespoon of tomato paste, 2 teaspoons of sugar, and a pinch of oregano. Mix well.

    Break 6 lasagna sheets into smaller, manageable pieces and add them directly into the pot with the chicken and tomato mixture. Add a splash of water if needed to ensure there is enough liquid for the pasta to cook.

    Cover the pot and simmer on low-medium heat until the pasta sheets are tender, stirring occasionally to prevent sticking.

    Once the pasta is cooked, pour the prepared white sauce over the top of the mixture. You can either swirl it in or leave it as a top layer. Garnish with more oregano if desired and serve hot.

Notes

This is a 'no-layer' lasagna designed for speed. The sugar helps balance the acidity of the fresh tomato puree. If the sauce becomes too thick while the pasta is cooking, add small amounts of water or chicken broth.
