Ingredients
- 4.5 tbsp olive oil (Use 2 tbsp for frying the peaches, around 1 tbsp to massage into the greens, and the remainder for a final drizzle over the burrata.)
- 3 peaches (White and orange-flesh peaches were used; edible portion, pits removed.)
- 100 g rocket or pea shoots (Use rocket, pea shoots, or a mix.)
- 1 burrata (Torn; weight not specified.)
- 4 tbsp fresh basil (Chopped.)
- 4 tbsp toasted pine nuts
- 0.5 tsp salt
- 0.125 tsp black pepper
Steps
- 1
Heat a frying pan over medium-high heat and add 2 tbsp of the olive oil.
- 2
Add the peaches to the pan. Fry for about 5–7 minutes, flipping them after a couple of minutes. Handle them carefully because they are delicate; cook until softened and lightly colored.
- 3
Add the rocket or pea shoots to a serving plate with around 1 tbsp olive oil. Massage the oil into the greens.
- 4
Arrange the fried peaches over the greens. Tear the burrata and add it on top.
- 5
Add the basil and toasted pine nuts. Drizzle the remaining olive oil over the burrata, then season with the salt and pepper. Serve.
Notes
The creator also suggests that the peaches can be cooked on a griddle pan or grill. Crusty bread is suggested for mopping up the salad. The burrata size is not specified.
