Ingredients

  • 400 g ground chicken
  • 0.5 red onion (chopped; approximately 55 g edible portion)
  • 0.5 jalapeño (chopped; approximately 7 g)
  • 1 egg (approximately 50 g without the shell)
  • 1 tbsp parsley (chopped)
  • 1 tbsp soy sauce
  • 1 tsp paprika
  • 0.5 tsp garlic powder
  • 1 tsp extra-virgin olive oil (for the filling and brushing the rolls; use a little additional oil if needed)
  • salt (to taste; the soy sauce is already salty)
  • black pepper (to taste)
  • 8 fogli rice paper (for the spring rolls; estimated total weight approximately 80 g)
  • sesame seeds (to taste, for garnish)
  • 2 tbsp mayonnaise (for the sauce)
  • hot sauce (to taste, to mix with the mayonnaise)

Steps

    In a large bowl, combine the ground chicken, chopped red onion, chopped jalapeño, parsley, egg, soy sauce, paprika, garlic powder, and extra-virgin olive oil. Add salt and pepper to taste.

    Mix well with a spatula or clean hands until the mixture is smooth and thoroughly combined.

    Fill a wide bowl with lukewarm water. Quickly dip one sheet of rice paper into the water, then place it on a clean work surface and let it soften for a few seconds. Do not soak it for too long, as it will continue to soften while you fill it.

    Place an even portion of filling in the center of the softened sheet, leaving space around the edges.

    Fold the edges of the rice paper inward over the filling, then gently roll it into a compact, tightly sealed spring roll.

    Repeat with the remaining rice paper sheets and filling until you have 8 rolls.

    Preheat the air fryer to 180 °C. Arrange the spring rolls in a single layer in the basket, without overlapping them.

    Lightly brush the surface of the rolls with a little oil and sprinkle them with sesame seeds.

    Cook at 180 °C for approximately 20 minutes, turning the spring rolls halfway through cooking. They should be golden brown and crispy on the outside; check that the chicken is fully cooked in the center, reaching an internal temperature of 74 °C.

    Mix the mayonnaise with the desired amount of hot sauce until smooth and evenly combined.

    Serve the spring rolls piping hot with the spicy mayonnaise.

Notes

The amount of sesame seeds, salt, pepper, and hot sauce is indicated by the author as to taste. For even cooking, do not overcrowd the air fryer basket. Serve immediately to keep the rice paper crispy.
