  • 107 g Powdered egg whites
  • 242 g Liquid egg whites
  • 226 g Cottage cheese
  • 48 g Calorie-free sweetener
  • 1 tsp Vanilla extract (About 5 ml.)
  • 40 g No-added-sugar chocolate chips (Divide them between the batter and the surface. No added sugar does not necessarily mean calorie- or carbohydrate-free: check the product label.)

    Preheat the oven to 175 °C. Line a loaf pan with parchment paper, pressing it firmly against the sides to make removing the cake easier.

    Place the cottage cheese, calorie-free sweetener, and vanilla extract in a blender. Blend until smooth and homogeneous, with no visible lumps.

    Pour the powdered egg whites and liquid egg whites into a clean bowl. Beat with an electric mixer for about 3-5 minutes, until the mixture is very thick, voluminous, and firm.

    Add the cottage cheese cream to the egg white mixture. Gently fold it in with a spatula, using bottom-to-top motions to minimize deflation.

    Add almost all of the chocolate chips to the batter and gently fold them in evenly. Reserve a small amount for the surface.

    Pour the batter into the prepared pan and lightly smooth the surface. Sprinkle the remaining chocolate chips on top.

    Bake in the preheated oven at 175 °C for about 30-35 minutes, until the cake is puffed, the surface is lightly golden, and the center appears set but still soft.
