A soft, golden focaccia topped with Tropea red onion and grapes braised with honey and apple cider vinegar, then finished with Gorgonzola PDO. The contrast of sweet, tangy, and savory flavors gives it a gourmet touch.

Steps
Put the flour in a bowl. Dissolve the yeast in the warm water with the sugar, then add it to the flour.
Mix, add the coarse salt, and let the dough rest for 15 minutes.
Perform three rounds of folds, letting the dough rest for 15 minutes between each round.
Cover the dough and let it rise for one hour.
Transfer the dough to baking pans and let it rest for another hour.
Press dimples into the dough with your fingers. Drizzle with extra-virgin olive oil and sprinkle with coarse salt.
Bake at 230 °C (450 °F) for 20 minutes, then reduce the temperature to 200 °C (400 °F) and bake for another 10 minutes, until the focaccia is golden.
Remove the focaccia from the oven and let it rest.
Slice the Tropea red onion. Heat a drizzle of oil in a pan and add the onion; cook gently until softened.
Deglaze the onion with a little apple cider vinegar and let the vinegar evaporate.
Add a couple of teaspoons of honey and a few grapes. Cook for a couple of minutes.
Season with salt and pepper to taste.
Cut the focaccia into wedges. Spoon a little onion and grapes onto each wedge and top with Gorgonzola PDO.
Notes
The quantities of grapes, Gorgonzola, additional oil, and vinegar are not specified. The source lists “coarse salt” among the ingredients and also mentions salt for adjusting the seasoning; no quantity of salt is given for the dough. The text does not specify how many baking pans to use. Estimated total time includes resting and rising time.
