Ingredients
- 1 Small sweet potato (Washed, slit lengthwise, and pierced with a fork)
- 1 tsp Olive oil (For coating the sweet potato and cooking the chicken; the recipe indicates using a small amount)
- 100 g Chicken breast (Cut into small pieces or sliced)
- 4 tbsp Crushed tomatoes or tomato sauce
- Garlic powder (To taste)
- Onion powder (To taste)
- Salt (To taste)
- Black pepper (To taste)
- 30 g Mozzarella (For covering the sweet potato; the amount is not specified in the source and has been estimated)
- 30 g Avocado (Optional, for serving)
- 1 tbsp Chives (Chopped; optional, for serving)
Steps
- 1
Wash and dry the sweet potato. Make a lengthwise cut from one end to the other without cutting all the way through, and pierce it several times with a fork.
- 2
Coat the surface of the sweet potato with a little olive oil.
- 3
Cook the sweet potato in the air fryer at 180 °C for approximately 35 minutes, until tender when pierced. Alternatively, bake it in a preheated oven at 180 °C, using top and bottom heat, for 45 minutes.
- 4
While the sweet potato is cooking, heat a skillet over medium heat and add a little olive oil.
- 5
Add the chicken breast and season with salt, pepper, garlic powder, and onion powder. Brown the chicken, stirring occasionally, until cooked through and browned on the outside.
- 6
Add the tomatoes and cook for a couple more minutes, until the filling is hot and slightly reduced.
- 7
When the sweet potato is tender, carefully open it along the cut. Lightly mash the inner flesh with a fork without breaking the skin.
- 8
Stuff the sweet potato with the chicken and tomato mixture.
- 9
Cover the filling with the mozzarella.
- 10
Return the sweet potato to the air fryer and cook at 200 °C for 3 minutes, until the mozzarella has melted.
- 11
Serve immediately with a little avocado and chopped chives, if desired.
Notes
The source does not specify the amount of oil, mozzarella, garlic, onion, salt, pepper, or optional ingredients; these amounts have been estimated for one serving. Check that the tomato sauce and mozzarella are certified gluten-free if there is a risk of cross-contamination.
