A clever dumpling hack using rice paper sheets instead of traditional dough for a crispy bottom and chewy top. These bite-sized dumplings are filled with a savory shrimp and pork mixture and finished with a spicy chili sauce.

Ingredients

  • 90 g minced shrimp
  • 125 g ground pork
  • 2 green onions (finely chopped)
  • salt (to taste)
  • pepper (to taste)
  • 0.25 tsp chicken bouillon powder
  • 0.25 cup water (for filling)
  • 2 tbsp soy sauce (for filling)
  • 1 tbsp oyster sauce
  • 0.25 tsp grated ginger
  • 1 tbsp water (for chili sauce)
  • 1 tbsp soy sauce (for chili sauce)
  • 2 tbsp chili oil
  • green onions (sliced, for garnish)
  • 20 small rice paper sheets (approximate count)
  • oil (spray for pan)
  • 2 tbsp water (for steaming in pan)

Steps

    Mix together all of the filling ingredients (minced shrimp, ground pork, chopped green onions, salt, pepper, chicken bouillon, 1/4 cup water, 2 tbsp soy sauce, oyster sauce, and grated ginger) in a bowl until the mixture becomes kind of sticky.

    Dip one rice paper sheet in water for just 1–2 seconds. It doesn’t need to be fully soft, it’ll continue softening once it’s out of the water as long as it's wet.

    Cut the wet rice paper into quarters, then overlap two pieces as shown in the video. Let them sit for a few seconds until they’re foldable and slightly softer.

    Add a small spoonful of filling to the center of the overlapped rice paper, then fold and pinch into a dumpling shape.

    Spray a non-stick pan with oil and arrange the dumplings in a single layer.

    Add about 2 tbsp water to the pan, cover with a lid, and cook over medium-high heat for about 4 minutes.

    Whisk together the chili sauce ingredients (1 tbsp water, 1 tbsp soy sauce, and 2 tbsp chili oil).

    Remove the lid from the pan, pour in the prepared chili sauce, and sprinkle over the sliced green onions.

    Continue cooking until the water has completely evaporated and the bottoms of the dumplings are golden and crispy.

    Serve immediately while they’re hot and crispy!

Notes

Tip: Small rice paper sheets make the perfect bite-sized dumplings. They’re crispy on the bottom, slightly chewy on top, and make a great dinner for two. Be careful not to over-soak the rice paper initially as it will continue to soften while you work.
