Ingredients
- 350 g Ground pork
- 2 Scallions, finely chopped
- 100 g Chinese leek, finely chopped
- 1 tsp Better Than Bouillon chicken base (To dissolve in the filling water)
- 60 ml Water (For the filling)
- 3 tbsp Soy sauce (To season the filling)
- 1 tbsp Oyster sauce
- 1 tsp Grated ginger
- 0.5 tsp Salt
- 0.5 tsp Black pepper
- 1 tbsp Sesame oil
- 1.5 tbsp Neutral oil (Use between 1 and 2 tablespoons)
- 1 paquete Dumpling wrappers (Approximately 1 package)
- 60 ml Water (For steaming)
- 0.5 tsp Better Than Bouillon chicken base (For the cooking liquid)
- 1 tbsp Soy sauce (For the chili sauce)
- 2 tbsp Chili oil
- 0.5 tsp Sesame seeds (For the sauce)
- Chopped scallions (For garnish, to taste)
Steps
- 1
Place the ground pork, scallions, Chinese leek, soy sauce, oyster sauce, ginger, salt, black pepper, and sesame oil in a large bowl.
- 2
Dissolve 1 teaspoon of Better Than Bouillon in 60 ml of water. Pour this mixture over the meat.
- 3
Mix vigorously for 2–3 minutes, until the filling is sticky and has fully absorbed the liquid.
- 4
Heat the neutral oil in a large nonstick skillet over medium heat.
- 5
Place a layer of dumpling wrappers in the skillet and spread a layer of the pork filling on top. Repeat the layers as shown in the video, finishing with all of the filling.
- 6
Mix 60 ml of water with ½ teaspoon of Better Than Bouillon. Pour the liquid evenly over the entire skillet and around the edges.
- 7
Cover the skillet and cook over medium heat for approximately 8 minutes, until the pork is fully cooked, reaches 71 °C in the center, and the wrappers are tender.
- 8
While the lasagna cooks, mix 1 tablespoon of soy sauce, 2 tablespoons of chili oil, and ½ teaspoon of sesame seeds in a small bowl.
- 9
Remove the lid and continue cooking for 2–4 minutes, until the remaining liquid evaporates and the bottom wrappers are golden brown and crispy.
- 10
Drizzle the chili sauce over the dumpling lasagna. Finish with plenty of chopped scallions and serve immediately.
Notes
The quantity of wrappers is not specified exactly: the author used approximately one package. Serve immediately to preserve the crispy texture of the base. The chili sauce can be adjusted to taste.
