Pineapple Orange Glazed Ham

Ingredients
- 1 spiral ham (about 8-10 lbs)
- 1.25 cup brown sugar (packed; divided (1 cup for glaze, 1/4 cup for topping))
- 1 cup honey
- 0.5 cup orange juice
- 1.25 cup pineapple juice
- 0.25 cup unsalted butter (4 tbsp)
- 2 tbsp maple syrup
- 1 tbsp Dijon mustard
- 1.5 tsp garlic powder
- 1.5 tsp onion powder
- 1 tsp smoked paprika
- 1 tsp bourbon brown sugar seasoning
- 1 tsp ground cinnamon
- 0.5 tsp ground ginger
- 0.5 tsp nutmeg
- 0.5 tsp all spice
- 0.5 tsp cloves
- 0.5 tsp salt
- 0.5 tsp white pepper (or black pepper)
- 1 orange zest (from one orange)
- cornstarch slurry (as needed to thicken)

Preheat your oven to 325°F (160°C).

In a large saucepan, combine 1 cup of the brown sugar, honey, maple syrup, orange juice, pineapple juice, butter, Dijon mustard, orange zest, and all the dry seasonings (garlic powder, onion powder, smoked paprika, bourbon seasoning, cinnamon, ginger, nutmeg, allspice, cloves, salt, and pepper).

Bring the mixture to a simmer over medium heat and cook until thickened, about 5-7 minutes.

Remove the glaze from the heat and allow it to sit and thicken further for 4-5 minutes.

Place the spiral ham in a roasting pan and pour half of the prepared glaze over it. Use a brush to ensure the glaze gets between the slices and coats the ham evenly.

Sprinkle the remaining 1/4 cup of brown sugar over the top of the glazed ham.

Cover the pan tightly with aluminum foil.

Bake the ham for approximately 2 to 2.5 hours (calculating about 15 minutes per pound). Baste the ham with the pan juices and glaze every 20-30 minutes during the cooking process.

Once the ham is heated through, remove some of the juices from the bottom of the roasting pan and transfer them to a clean saucepan.

Bring these pan juices to a simmer, then whisk in a cornstarch slurry and stir until the sauce has thickened to your liking. Set this sauce aside.

Uncover the ham, add a little more glaze on top, and place it under the broiler for 2-4 minutes until the surface is deeply caramelized and bubbly.

Pour the remaining thickened glaze over the ham and serve immediately.
Notes
To make a cornstarch slurry, mix equal parts cornstarch and cold water (e.g., 1 tbsp each) until smooth before adding to the simmering liquid.
