Weights are estimates. Together, the ingredients weigh about 2.88 kg before cooking, which is about 360 g per serving.
Steps
Preheat the oven to 425 °F (220 °C) (220 °C (425 °F)).
Cut the sweet potatoes into thin slices, about ¼ inch (6 mm) thick. Thinner slices will bake faster.
Make the cheese sauce: add the eggs, cottage cheese, ¾ cup of the Parmesan, ¼ tsp paprika, garlic powder, onion powder, a pinch of salt, and black pepper to taste to a blender.
Blend until smooth and set aside. Do not taste the sauce raw, as it contains uncooked egg.
Heat a skillet over medium heat.
Add the diced onion, garlic, and meat seasonings: 2 tsp paprika, chili powder, Italian seasoning, 1 tsp salt, and 1 tsp black pepper. Cook until the onion softens.
Add the chopped tomatoes and sliced mushrooms.
Lightly crush the tomatoes in the skillet to form a sauce.
Add the ground turkey and cook until no longer raw.
Drain the excess liquid from the meat mixture.
Grease a 9 × 13-inch (23 × 33 cm) glass baking dish with the avocado oil.
Layer in the sweet potato slices, followed by the cheese sauce and meat mixture.
Repeat the layers, finishing with cheese sauce, meat mixture, and the remaining ¼ cup of Parmesan on top.
Cover the dish with aluminum foil and bake for 40–45 minutes.
Remove the foil and broil for a few minutes, until the top is crisp.
Notes
The tomatoes can be replaced with one 6 oz can of tomato paste; the recipe does not specify how to adjust the liquid if using this alternative. It indicates about 1¾ cups per serving and declares the following macros per serving: 391 kcal, 36 g protein, 15 g fat, and 29 g carbohydrates. The audio mentions ground beef, but the recipe text specifies turkey as the main ingredient.
