Kickass Apple Pie Cookies

Ingredients
- 3 Honeycrisp apples (large, about 6 cups diced)
- 3 cup blueberries
- 3 tbsp maple syrup
- 1 tsp cinnamon
- salt (pinch)
- 3 scoop vanilla protein powder (approximately 1 cup; author uses Promix)
- 1 cup old-fashioned oats
- 1 cup oat flour
- 0.5 cup Greek yogurt
- 2 tbsp honey
- 2 tbsp lemon juice (juice of 1/2 lemon)
- 0.25 cup milk (optional; only if mixture is too dry)

Preheat your oven to 350°F (175°C) and line a large baking sheet with parchment paper.

Prepare the apples: In a pan over medium heat, combine the diced apples, maple syrup, cinnamon, lemon juice, and a pinch of salt.

Cook the apple mixture for 6–8 minutes, stirring occasionally, until the apples have softened.

In a large mixing bowl, combine the vanilla protein powder, honey, oat flour, old-fashioned oats, and Greek yogurt.

Mix the dough ingredients together until the consistency is thick and wet. If the mixture seems overly dry, add a splash of milk (up to 1/4 cup). If it is too wet, add a little more oat flour.

Gently fold the cooked apples and the fresh blueberries into the dough until evenly distributed.

Scoop the mixture into 12 equal-sized cookies and place them onto the prepared baking sheet.

Bake for 12 minutes. Do not over-bake; pull them out while they are still soft to the touch.
Notes
Don’t over-bake. Pull them out while still soft. If overly dry add a splash of milk. If overly wet add a bit more oat flour. These are great for meal prep as a pre or post-workout snack.
