Kickass Apple Pie Cookies
A high-protein, nutrient-dense snack designed for pre or post-workout fuel. These cookies feature tender sautéed Honeycrisp apples folded into a dough of oats, oat flour, and Greek yogurt.

Ingredients
- 3.5 Honeycrisp apples (large, diced (about 3-4 apples))
- 3 tbsp maple syrup
- 2 tsp cinnamon
- 0.5 tsp salt
- 3 scoops vanilla protein powder (Promix brand recommended)
- 1 cup old-fashioned oats
- 1 cup oat flour
- 0.5 cup nonfat Greek yogurt
- 2 tbsp honey
- 0.5 lemon lemon juice (juice of half a lemon; add zest for extra flavor)
- 0.25 cup milk (optional; any kind; add only if mixture is too dry)

Preheat your oven to 350°F (175°C) and line a large baking sheet with parchment paper.

Prepare the apples: In a hot skillet, combine the diced Honeycrisp apples with 3 tablespoons of maple syrup, 2 teaspoons of cinnamon, the juice of half a lemon (and zest if using), and 1/2 teaspoon of salt.

Cook the apple mixture over medium heat for 6-8 minutes, stirring occasionally, until the apples are soft and well-coated. For best results, let them cool slightly (or place in the freezer briefly) before adding to the dough.

In a large mixing bowl, combine 3 scoops of vanilla protein powder, 2 tablespoons of honey, 1 cup of oat flour, 1 cup of old-fashioned oats, and 1/2 cup of nonfat Greek yogurt.

Mix the dough ingredients until a thick, wet consistency forms. If the mixture is overly dry, add a splash of milk (up to 1/4 cup). If it is overly wet, add a small amount of extra oat flour.

Gently fold the cooked apples into the dough until evenly distributed.

Scoop the mixture into 10 equal-sized balls (approximately 133g each) and place them on the prepared baking sheet.

Bake for 12 minutes. Do not over-bake; the cookies should still be soft when removed from the oven.
Notes
Storage: Store in a container on the counter (note they will become moist after a day) or freeze. To reheat from frozen, microwave for 10-15 seconds. Texture Tips: If the dough is too dry, add a splash of milk. If too wet, add a bit more oat flour. Pull them out of the oven while still soft-ish to ensure they don't dry out.
