Funnel cakes made with complete pancake mix and Sprite are fried until lightly golden, rested for a couple of hours, then reheated in an air fryer. The creator reports that reheating works, though the cakes can be a little chewy.

Ingredients
Steps
Pour frying oil into a small pan, using enough for a funnel cake to float while leaving room so bubbling oil will not overflow. Heat the oil on the stove to 375°F (190 °C) (190°C (375 °F)).
Put some complete pancake mix in a bowl. Gradually mix in Sprite until the batter has a thin pancake-batter consistency. The creator notes that it will thicken as it sits, so make it a little thinner than the desired final consistency.
Pour the batter into a squeeze bottle with a wide opening, approximately as wide as you want the funnel-cake strands to be, and put on the lid.
Squeeze the batter into the hot oil in a swirling funnel-cake shape.
Fry for about 30 seconds to 1 minute, until the crevices begin to look golden brown. The creator intentionally undercooks the cakes slightly for reheating.
Flip the cake, then cook for about 30 seconds more.
Remove the cake from the oil and place it on a paper-towel-lined tray, with a wire cooling rack nearby. Let the cakes sit out for a couple of hours before reheating.
Place a cake in the air-fryer basket and air-fry at 350°F (180 °C) (175°C (350 °F)). Check after about 3 minutes; the creator found that was enough, though the spoken estimate was up to about 5 minutes.
Dust the reheated funnel cake with powdered sugar using a small tea sifter, then serve. The cake will be hot.
Notes
No exact ingredient quantities or yield are given; the batter is adjusted by consistency. The creator says the reheated cake can be a little chewy. Freezing is mentioned as an untested experiment, not an instruction.
