Yolk Volcano (Truffle-Injected Fried Egg Yolk over Roasted Mushrooms)

Ingredients
- 4 Large egg yolks (Carefully separated from whites)
- 2 tbsp Black truffle sauce (For injecting into the yolks)
- 1 cup Breadcrumbs (For coating and curing the yolks)
- 8 Mushrooms (Large white or cremini mushrooms, cleaned)
- 3 tbsp Olive oil (For the mushroom marinade)
- 1 tsp Garlic powder (Generous amount for the marinade)
- 1 tsp Dried parsley (For the marinade)
- Salt (To taste)
- 1 cup Vegetable oil (For deep frying the yolks)

Carefully separate the egg yolks from the whites, ensuring the yolks remain intact.

Using a syringe or small piping tool, carefully inject each raw egg yolk with a small amount of black truffle sauce.

Prepare a bed of breadcrumbs in a shallow container. Place the injected yolks onto the breadcrumbs and cover them completely with more breadcrumbs.

Place the container in the refrigerator for at least 2 hours to allow the yolks to firm up and the breadcrumbs to adhere.

Preheat your oven to 180°C (350°F).

In a small bowl, prepare the marinade by mixing the olive oil, salt, a generous amount of garlic powder, and dried parsley.

Brush the cleaned mushrooms thoroughly on all sides with the garlic-parsley oil mixture, ensuring they are well-coated.

Place the mushrooms in the oven and roast for 10 minutes at 180°C.

Heat vegetable oil in a small pan until very hot.

Remove the breaded yolks from the refrigerator and fry them in the hot oil for no more than 15 seconds, just until the exterior is golden and crispy while the center remains liquid.

Place one fried yolk on top of each roasted mushroom and serve immediately.
Notes
The chef calls this 'Volcán de Yema' because the truffle-infused yolk flows out like lava when cut. Ensure the frying oil is very hot so the breading crisps quickly without cooking the yolk through.
