Sautéed Zucchini, Carrot, and Omelet Strips
A quick and light dinner of vegetable strips, egg omelet, and soy sauce. It takes approximately 10 minutes to prepare and can be finished with chives, sesame seeds, and extra-virgin olive oil.

Ingredients
- 0.5 Large zucchini (Cut into thin slices and then into narrow strips)
- 0.5 Large carrot (Cut into thin slices and then into narrow strips)
- 2 Eggs (Beaten)
- Cooking oil (A little, for making the omelet and sautéing the vegetables)
- 2 tbsp Soy sauce (For a strictly gluten-free version, use certified gluten-free tamari)
- Onion powder or garlic (Optional, to taste)
- Chives (Optional; chopped for serving)
- Sesame seeds (Optional, for serving)
- Extra-virgin olive oil (A drizzle, for finishing)

Wash the zucchini and carrot. Using a mandoline or vegetable peeler, cut both into thin slices. Stack the slices and cut them lengthwise into narrow, ribbon-like strips.

Beat the eggs in a bowl until the mixture is smooth.

Heat a skillet over medium heat and add a little oil. Pour in the beaten eggs, cover the skillet, and cook the omelet on both sides until set and lightly golden, approximately 1-2 minutes per side.

Transfer the omelet to a cutting board, roll it up, and cut it into thin strips. Set aside.

Add a little more oil to the skillet and heat it over medium heat.

Add the carrot strips first. Sauté them until they begin to soften, approximately 1-2 minutes; they should retain some firmness.

Add the zucchini strips, omelet strips, soy sauce, and, if desired, a little onion powder or garlic.

Sauté everything for 2 minutes, stirring frequently, until the zucchini is tender but not falling apart and the ingredients are well coated with the sauce.

Serve immediately. Finish with chopped chives, sesame seeds, and a drizzle of extra-virgin olive oil.
Notes
