Ingredients
- 0.5 cabbage (shredded)
- 4 eggs (beaten)
- garlic, ginger, and scallion whites (the "big three" aromatics, minced)
- 0.5 carrot (julienned)
- salt (to taste)
- 0.5 tsp chicken bouillon (referred to as "evil chicken bouillon")
- 1 tbsp soy sauce
- 1 tbsp oyster sauce
- 2 green onion (chopped, green parts)
- 2 tbsp cooking oil (divided)
Steps
- 1
Shred the cabbage into thin strips using a knife.
- 2
In a bowl, beat four eggs until well combined.
- 3
Heat a splash of oil in a wok or large skillet over medium-high heat. Add the beaten eggs and scramble until just set. Remove the eggs from the pan and set aside.
- 4
Add another splash of oil to the same pan. Add the "big three" aromatics (minced garlic, ginger, and scallion whites) and stir-fry until the aroma comes out.
- 5
Add the shredded cabbage and julienned carrots to the pan.
- 6
Stir-fry on high heat until the vegetables begin to soften.
- 7
Season with salt, chicken bouillon, soy sauce, and oyster sauce.
- 8
Add the scrambled eggs back into the pan along with the chopped green onions.
- 9
Toss everything together quickly on high heat until well combined and the cabbage is perfectly tender-crisp.
- 10
Serve immediately.
Notes
The 'big three' in Chinese cooking typically refers to garlic, ginger, and green onions (scallions). The creator uses the term 'evil chicken bouillon' as a humorous reference to MSG or bouillon powder.
