Ingredients
- 300 g ripe banana (Mashed to a paste)
- 85 g unsalted butter (Browned; plus a small amount to grease the tin)
- 1 egg (Medium)
- 100 g caster sugar (Super fine)
- 80 g soft light brown sugar
- 185 g plain white flour
- 1 tsp baking powder
- 0.25 tsp baking soda
- 0.25 tsp salt
- 175 g semi-sweet dark chocolate (Chopped)
- 250 g cream cheese (For topping)
- 3.5 tbsp icing sugar (Source gives 3–4 tbsp; adjust to taste and add more if desired)
- 0.25 tsp vanilla bean paste (For the frosting)
- 1 tbsp unsalted butter (For cinnamon butter)
- 1 tsp cinnamon powder (For cinnamon butter)
- butter (Small amount for greasing the baking tin)
Steps
- 1
Preheat the fan-assisted oven to 170°C (338°F).
- 2
Put the 85 g unsalted butter in a saucepan over medium-high heat. Cook for about 5 minutes, until browned.
- 3
Grease a 23 × 12 cm rectangular loaf tin with a small amount of butter. Lay a strip of baking paper in the center.
- 4
Mash the ripe bananas with a fork until they form a paste.
- 5
Add the browned butter and egg to the mashed bananas, then whisk.
- 6
Add both sugars and whisk to combine.
- 7
Add the flour, baking powder, baking soda, and salt. Whisk until combined.
- 8
Add the chopped chocolate and fold it through with a wooden spoon.
- 9
Spoon the batter into the prepared loaf tin and cover with foil or baking paper.
- 10
Bake for around 50 minutes, or until a fork inserted into the middle comes out clean. Remove the cover after about 40 minutes.
- 11
Leave the banana bread to cool completely in the tin. If preparing the frosting the next day, cover the cooled tin with cling film and leave at room temperature.
- 12
When ready to serve, whisk the cream cheese, vanilla bean paste, and icing sugar in a bowl. Taste and add more icing sugar if you want it sweeter.
- 13
In a saucepan, melt the tablespoon of butter with the cinnamon powder and mix together.
- 14
Remove the cooled banana bread from the tin. Spread on the frosting, spoon cinnamon butter over the top in puddles, and swirl it through the frosting.
- 15
Slice and serve.
Notes
The source says the frosting can be prepared the next day; after the loaf cools, cover it with cling film and leave at room temperature. It does not give a specific cooling duration. Recipe states 3–4 tbsp icing sugar; quantity shown as the midpoint, with the range retained in the note.
