Ingredients

  • 0.5 cup Beef broth
  • 1 can Rotel
  • 12 oz Corn (One bag; Southwest corn also works well.)
  • 1 Onion (Optional; diced.)
  • 1 packet Taco seasoning
  • 1 cup Mexican cheese (Shredded.)
  • 1 lb Ground beef (Brown on the stovetop and drain excess grease before adding.)
  • 1 package Smoked sausage (Cut into bite-sized pieces; package size not stated.)
  • 26 oz Frozen hash browns (One bag.)
  • 2 cups Pepper jack cheese (Sprinkle over the top; do not stir in during cooking.)
  • Sour cream (For topping; amount to taste.)
  • Cilantro (For topping; a little, to taste.)

Steps

  1. 1

Brown the ground beef on the stovetop, then drain off the excess grease.

  2. 2

Dice the optional onion. Cut the smoked sausage into bite-sized pieces.

  3. 3

Add the beef broth, Rotel, corn, diced onion if using, taco seasoning, Mexican cheese, browned ground beef, sausage, and frozen hash browns to the slow cooker.

  4. 4

Stir everything together well to combine.

  5. 5

Sprinkle the pepper jack cheese evenly over the top. Do not stir it in.

  6. 6

Cover and cook on high for 3–4 hours or on low for 6–7 hours. If your slow cooker switches to warm when cooking is finished, the casserole can stay warm a little longer if needed.

  7. 7

Serve topped with sour cream and a little cilantro.

Notes

Smoked sausage package size was not stated, so its weight and corresponding nutrition are estimated. The transcript gives no precise amounts for sour cream or cilantro.
