Ingredients
- 1 cup Butter (Melted; equivalent to 2 sticks)
- 1 cup Light brown sugar
- 0.5 cup Granulated sugar
- 2 tsp Vanilla extract
- 2 Eggs (Lightly whisked)
- 2 cups All-purpose flour
- 1 tsp Baking soda
- 0.5 tsp Salt
- 1.5 cups Mini semisweet chocolate chips (The creator uses mini chocolate chips for part of the chocolate)
- 0.5 cup Semisweet chocolate chunks (Used with the mini chocolate chips)
- Cooking spray (For greasing the crockpot; parchment paper may be used instead)
- Paper towels (For covering the crockpot under the lid to absorb moisture; change them if they become soaked)
Steps
- 1
Grease the inside of the crockpot with cooking spray. Alternatively, line it with parchment paper. The creator specifically recommends greasing or lining the crockpot for this cookie.
- 2
Melt 1 cup (2 sticks) of butter in the microwave.
- 3
In a bowl, combine the melted butter, light brown sugar, granulated sugar, vanilla extract, and lightly whisked eggs. Mix until the wet ingredients are combined, then set the bowl aside.
- 4
In a separate bowl, combine the all-purpose flour, baking soda, and salt. Mix them together with a fork.
- 5
Add the wet mixture to the dry ingredients. Mix until a cookie dough forms and the ingredients are combined.
- 6
Add the mini semisweet chocolate chips and semisweet chocolate chunks. Fold them into the dough until they are distributed throughout.
- 7
Transfer the cookie dough to the prepared crockpot and spread it into the crockpot as needed.
- 8
Lay paper towels across the top of the crockpot, using just enough to cover the opening without a large amount hanging over the sides. The paper towels should fold upward when the lid is placed on top and should not touch the outside crockpot shell.
- 9
Cover with the lid and cook on High for 1 to 2 hours or on Low for 3 to 4 hours. If the paper towels become soaked during cooking, replace them.
- 10
Check for doneness: the outside should be cooked while the middle remains soft, but not underbaked.
- 11
Turn off the crockpot and let the cookie rest, covered, for approximately 30 to 45 minutes. Leave the lid on during the rest.
- 12
Serve the warm crockpot cookie, optionally with cold vanilla ice cream as suggested by the creator.
Notes
The source gives two cooking options: High for 1–2 hours or Low for 3–4 hours. The center is expected to remain soft when done. The source does not specify the crockpot size or an exact serving yield. The paper-towel technique is intended to absorb moisture during cooking; ensure the towels do not contact the exterior of the crockpot or any heating element.
