Biscoff Banana Pudding

Ingredients
- 1.5 cup cold milk (cold)
- 14 oz sweetened condensed milk (1 can)
- 3.4 oz instant vanilla pudding mix (1 package)
- 2 cup heavy whipping cream (cold)
- 0.25 cup powdered sugar (to taste)
- 0.5 cup Biscoff cookie butter (divided; some for the cream and some for drizzling)
- 1 package Biscoff cookies (Lotus Biscoff cookies, some kept whole and some crushed for garnish)
- 4 bananas (sliced)

In a large mixing bowl, combine the cold milk and sweetened condensed milk. Whisk until well combined.

Add the instant vanilla pudding mix to the milk mixture. Stir thoroughly until the powder is fully dissolved and the mixture begins to thicken slightly.

Cover the pudding mixture and place it in the refrigerator to chill and set for at least 2 to 3 hours.

In a separate chilled bowl, whip the heavy whipping cream with powdered sugar until stiff peaks form.

Add a portion of the Biscoff cookie butter to the whipped cream and fold gently until incorporated.

Once the pudding has set in the fridge, remove it and scoop it into the whipped cream mixture. Fold together gently until you have a smooth, uniform, and creamy pudding base.

Begin assembly by spreading a layer of the pudding cream at the bottom of your serving dish.

Add a layer of whole Biscoff cookies over the cream.

Add another layer of the pudding cream, followed by a layer of sliced bananas.

Melt a small amount of cookie butter in the microwave until pourable, then drizzle it over the banana layer.

Repeat the layers: add more cookies, another layer of cream, more sliced bananas, and another drizzle of melted cookie butter.

Finish with a final layer of cream covering the entire surface. Drizzle generously with more melted cookie butter and top with a sprinkle of crushed Biscoff cookies.
Notes
For the best results, let the assembled pudding sit in the fridge for a few hours before serving to allow the cookies to soften slightly. Ensure the milk and heavy cream are very cold before starting.
