Ingredients
- 14 oz Kielbasa (Sliced)
- 1 Onion (Chopped)
- 0.5 tsp Black pepper
- 0.25 tsp Cayenne pepper (Omit for a milder dish)
- 1 tsp Paprika
- 1 tsp Dried oregano
- 1 tsp Onion powder
- 1 tbsp Garlic (Minced)
- 3 cups Rotini pasta (Uncooked)
- 3 cups Beef broth
- 8 oz Tomato sauce (One can)
- 8 oz Colby Jack cheese (Shredded from a block)
- 0.333 cup Milk (Added with the cheese)
- Dried parsley (For topping, to taste)
Steps
- 1
Slice the kielbasa and chop the onion. Mince the garlic, measure the seasonings, and shred the Colby Jack cheese so everything is ready before cooking.
- 2
Heat a large, lidded skillet over medium-high heat. Add the sliced kielbasa and chopped onion, then cook, stirring occasionally, until the kielbasa is browned and the onion has softened, about 5–7 minutes.
- 3
Add the minced garlic to the skillet. Stir and cook for about 30–60 seconds, just until fragrant; do not let the garlic burn.
- 4
Add the uncooked rotini, beef broth, and tomato sauce to the skillet. Stir well so the pasta is submerged as much as possible and the sauce is evenly distributed.
- 5
Add the black pepper, cayenne pepper, paprika, oregano, and onion powder. Stir thoroughly to combine the seasonings with the pasta and sauce.
- 6
Bring the mixture to a quick boil, watching for steady bubbling across the skillet. Once it is bubbling well, reduce the heat to medium-low.
- 7
Cover the skillet with a lid and cook for 12–15 minutes, stirring once or twice if needed to prevent sticking. Continue until the rotini is tender and most of the liquid has been absorbed; if the pasta is still firm, cover and cook a few minutes longer.
- 8
When the pasta is cooked, add the shredded Colby Jack cheese and milk. Stir until the cheese melts completely and the sauce becomes creamy and coats the pasta.
- 9
Remove the skillet from the heat, sprinkle the top with dried parsley, and serve hot.
Notes
The cayenne gives the dish a little heat and may be left out. Use a large skillet with a lid so the pasta can cook evenly in the broth and tomato sauce. The nutrition estimates are for the entire recipe and will vary by kielbasa, cheese, milk, and broth brands.
