Rice Paper Napolitanas
A crispy, flavorful, and gluten-free alternative to traditional sandwiches, using rice paper hydrated in egg and filled with ham and cheese.

Ingredients
- 6 rice paper (sheets)
- 2 eggs
- salt (a pinch)
- 3 turkey ham (slices)
- 3 cheese (slices)
- olive oil (for drizzling)
- sesame seeds (optional, for garnish)
Steps

In a wide bowl, whisk the two eggs with a pinch of salt.

Dip each rice paper sheet into the egg mixture for a few seconds until they soften.

Place two hydrated rice sheets, one on top of the other, on a work surface.

Place a slice of turkey ham and a slice of cheese in the center of the sheets.

Fold the edges of the rice paper toward the center, forming a well-sealed rectangular or square parcel.

Repeat the process with the remaining sheets and filling until 3 napolitanas are formed.

Optionally, garnish the top of the parcels with sesame seeds.

Preheat the air fryer to 350°F (175°C).

Drizzle the napolitanas with a bit of olive oil and place them in the air fryer basket.

Cook in the air fryer at 350°F for 12 minutes until they are golden and crispy.
Notes
This recipe is ideal for a quick breakfast or a gluten-free snack. Make sure not to over-hydrate the rice paper so it doesn't tear when assembling the parcels.
