Crispy Goat Cheese, Honey, and Thyme Pouches
Crispy bites made with rice paper sheets and filled with goat cheese, honey, and fresh thyme. They are cooked in the air fryer until golden and are gluten-free, flavorful, and perfect as a snack.

Ingredients
- 6 Rice paper sheets (Cut each sheet into 4 portions.)
- 6 Goat cheese (Cut into 6 pieces, one for each pouch; approximately 15 g per piece.)
- Honey (A few drops for the filling and extra honey for decorating; estimated total amount: 15 g.)
- Fresh thyme (For the filling and decorating; amount to taste, estimated at 3 g.)
- Water (As needed to moisten the rice paper portions.)
- Extra-virgin olive oil (As needed to lightly coat the pouches; estimated total amount: 10 g.)

Cut each of the 6 rice paper sheets into 4 equal portions, yielding 24 pieces in total.

Lightly moisten the rice paper portions with water. Work quickly: they should soften and become flexible, but not become soaked or tear.

To form each base, place 4 rice paper portions on top of one another, aligning them as well as possible. Repeat the process until you have formed 6 stacks.

Place a piece of goat cheese in the center of each stack.

Add a few drops of honey and a little fresh thyme to the center.

Lift the edges of each stack around the filling and close them to form a pouch. Hold and press the top until the rice paper adheres and the pouch is sealed.

Lightly coat each pouch with extra-virgin olive oil, covering the surface to help it brown and become crispy.

Place the pouches in the air fryer basket without overlapping them. Cook at 360 °F (180 °C) for 15 minutes, or until golden and crispy.

Carefully remove the pouches, as the cheese and honey will be hot. Garnish with a little more honey and fresh thyme before serving.
