Steps

  1. Dice the brown onion and garlic cloves if not already prepared. Warm the tortillas so they are ready for filling.

  2. Cook the diced onion in a large pan over medium heat until softened.

  3. Add the extra-lean beef mince, break it up with a spoon, and season with salt, onion powder, garlic powder, sage, thyme, and smoked paprika. Cook until browned.

  4. Stir in the diced garlic and Worcestershire sauce. Continue cooking until the beef is fully cooked.

  5. Add the tomato paste and mix well. Set the beef mixture aside.

  6. In a bowl, whisk together the eggs, egg whites, and salt until combined.

  7. Melt the light butter in a separate pan over low to medium heat.

  8. Add the egg mixture to the pan. Gently stir and fold until fluffy, then set aside.

  9. For each warm tortilla, add a portion of the beef mixture and scrambled eggs. Drizzle with optional Sriracha mayonnaise, sprinkle with chives, and roll tightly. Repeat to make 10 burritos.

  10. Sprinkle grated cheddar cheese into a clean pan over low heat, then immediately place a burrito seam-side down on top.

  11. Cook for 2–4 minutes, until the cheese is golden and crispy and seals the burrito. Repeat with the remaining burritos.

  12. Wrap each burrito individually in foil and store in the fridge or freezer.

  13. To reheat from frozen, remove the foil and microwave for around 2 minutes to thaw. Then air-fry or oven-bake at 190°C (375 °F) for 5–8 minutes, until heated through and crispy.
