High-Protein Cheesy Grilled Beef Burritos

Ingredients

  • 0.5 White onion (diced)
  • 900 g Extra-lean ground beef
  • 4 cloves Garlic (minced)
  • 1 tsp Salt (for the taco spice mix)
  • 1 tsp Chili powder (for the taco spice mix)
  • 0.5 tsp Ground cumin (for the taco spice mix)
  • 2 tsp Smoked paprika (for the taco spice mix)
  • 0.5 tsp Black pepper (for the taco spice mix)
  • 1 tsp Onion and garlic powder (for the taco spice mix)
  • 1.5 tsp Oregano (for the taco spice mix)
  • 400 g Canned crushed tomatoes
  • 100 g Light cheddar cheese (shredded)
  • 250 ml Chicken broth
  • Fresh cilantro (to taste)
  • 600 g Cooked minute rice (Mexican style or white rice of choice)
  • 6 Tortillas (large high-protein low-carb tortillas)
  • 6 tbsp Nacho cheese sauce (1 tablespoon per burrito)
  • 120 g Shredded light mozzarella (20g per burrito for the grilled crust)

Steps

    In a large skillet over medium heat, sauté the diced white onion with the extra-lean ground beef until the meat is fully cooked.

    Add the minced garlic and the taco spice mix (salt, chili powder, cumin, smoked paprika, black pepper, onion/garlic powder, and oregano). Mix well to coat the meat.

    Pour in the canned crushed tomatoes, add the light cheddar cheese and chicken broth (just enough to cover the meat mixture).

    Stir over low heat until everything is well combined.

    Fold in the fresh cilantro and cooked minute rice. Place a lid on the skillet and simmer for about 20 minutes, stirring every few minutes.

    Lightly warm the 6 tortillas to make them pliable.

    Evenly distribute the beef and rice filling onto each tortilla. Add one tablespoon of nacho cheese sauce to each portion.

    Roll the burritos tightly, tucking in the sides.

    For the grilled finish: sprinkle some shredded mozzarella directly into a hot skillet, place the burrito on top (seam side down) to seal the burrito and create a golden, crispy cheese crust.

    Repeat for the remaining 5 burritos until they are all golden brown.

Notes

You can replace the homemade spice mix with a store-bought taco seasoning packet. For the rice, Ben's Original Mexican style minute rice is recommended for extra flavor.
