Ingredients

  • 12 Ontario eggs (fresh Canadian Grade A)
  • 2 Roma Tomatoes (diced)
  • 0.5 Red onion (diced)
  • 2 Avocados (ripe)
  • 1 Jalapeño (deseeded and diced)
  • 1 bunch Cilantro (chopped)
  • 1 Lime (juice only)
  • 2 cup Cheddar cheese (grated)
  • 6 strips Bacon
  • 6 Hash browns (frozen patties or portions)
  • 2 tbsp Butter
  • 2 tsp Olive oil (divided)
  • 1 tbsp Salt (divided)
  • 2 tsp Pepper (divided)
  • 6 white tortillas (10-inch size)
  • Hot sauce (optional, for assembly)

Steps

    In a large bowl, combine the avocados, 1 tablespoon of the diced jalapeños, 1 tablespoon of the chopped cilantro, and the juice from one lime.

    Mash the mixture together with a fork until it is evenly combined but still chunky.

    Season the guacamole with salt and pepper to taste.

    In a medium-sized bowl, mix together the diced tomatoes, red onion, remaining cilantro, and remaining jalapeños.

    Add olive oil, salt, and pepper to the salsa mixture and mix thoroughly.

    Preheat your oven to 400°F (200°C).

    On a baking tray lined with parchment paper, arrange the bacon strips and cook in the oven for 15-20 minutes or until the bacon is crisp.

    On a separate tray lined with tinfoil, add the frozen hash browns and cook as directed on the package.

    In a large pan over medium heat, add olive oil and the 12 eggs. Stir slowly with a spatula to scramble.

    Once the eggs are almost cooked, add the butter and remove the pan from the heat.

    Season the eggs with salt, mix well to combine, and set aside.

    Place one tortilla down on your work surface.

    Add one tablespoon of guacamole and spread it evenly across the center of the tortilla.

Notes

For the best results, use a non-stick pan when searing the burritos to prevent sticking. The recipe is highly customizable—feel free to add more or less hot sauce depending on your heat preference.
