Ingredients

  • 5 cup all-purpose flour
  • 0.5 cup butter (Cold, diced; for the pastry dough.)
  • 0.5 cup butter (Frozen and grated for folding; use ¼ cup at a time.)
  • 1 tsp turmeric
  • 1 tsp curry powder (For the pastry.)
  • 1 tsp salt (For the pastry.)
  • 0.5 tsp black pepper (For the pastry.)
  • ice-cold water (As needed to bring the pastry dough together.)
  • 2 lb ground beef
  • 1 onion (Finely diced.)
  • 3 scallions (Chopped.)
  • 1 Scotch bonnet pepper (Seeded and minced.)
  • 3 garlic (Cloves, minced.)
  • 1 ginger (Thumb-sized piece, minced.)
  • 1 tbsp fresh thyme (Chopped.)
  • 1 tbsp curry powder (For the beef filling.)
  • 1.5 cup beef stock (Use 1½–2 cups.)
  • 1 tbsp browning (Browning sauce/seasoning; composition unspecified.)
  • 2 tbsp soy sauce
  • 2 slices white bread (Blend with a little water to make a paste.)
  • water (A little, for blending the bread into a paste.)
  • neutral oil (A little, for sautéing.)
  • salt (For seasoning the filling, to taste.)
  • black pepper (For seasoning the filling, to taste.)

Steps

  1. 1

In a bowl, mix the flour, turmeric, pastry curry powder, salt, and black pepper.

  2. 2

Rub the cold diced butter into the flour mixture until incorporated.

  3. 3

Gradually add ice-cold water as needed, mixing until a dough forms.

  4. 4

Cover the dough and rest it in the refrigerator for 30 minutes.

  5. 5

Roll out the dough. Grate ¼ cup of the frozen butter over it, then fold the dough into thirds.

  6. 6

Grate the remaining ¼ cup frozen butter over the dough and fold it into thirds again. Chill the pastry before rolling it out for assembly; the source does not specify this chilling time.

  7. 7

In a pan, brown the ground beef, then remove it from the pan.

  8. 8

Add a little neutral oil to the same pan. Sauté the onion, scallions, Scotch bonnet, garlic, ginger, and thyme.

  9. 9

Add the filling curry powder and cook until fragrant.

  10. 10

Return the browned beef to the pan. Add the beef stock, browning, and soy sauce.

  11. 11

Simmer the beef mixture until rich and flavourful; no simmering time is specified.

  12. 12

Season the filling with salt and pepper to taste.

  13. 13

Blend the white bread with a little water to form a paste, then stir the paste into the beef mixture.

  14. 14

Blend one-third of the beef mixture until fine, then fold it back into the remaining filling.

  15. 15

    Cool the beef filling completely.

  16. 16

Roll the pastry to roughly ⅛-inch thickness and cut it into circles.

  17. 17

Place filling on each pastry circle, fold the pastry over, and seal the edges with a fork.

  18. 18

Chill the assembled patties for 15–20 minutes.

  19. 19

Bake at 400–425°F (about 204–218°C) for 25–30 minutes, until golden, puffed, and flaky.

Notes

The source does not specify the amount of ice water, neutral oil, or water for the bread paste, the simmer duration, the chill time after folding butter into the pastry, or the number/size of patties. It gives a baking-temperature range of 400–425°F and a baking time of 25–30 minutes.
