Ingredients

  • 1 lb flank steak (thinly sliced)
  • 1 tbsp soy sauce (for the marinade)
  • 1 tbsp oyster sauce (for the marinade)
  • 1 tbsp Shaoxing wine (for the marinade)
  • 1 tbsp cornstarch (for the marinade)
  • 0.25 tsp baking soda (for the marinade)
  • 1 yellow onion (cut)
  • 4 cloves garlic (chopped)
  • 1 inch ginger (grated)
  • 1 bundle green onions (separate the whites and greens)
  • 3 tbsp light soy sauce (for the sauce)
  • 2 tbsp dark soy sauce (for the sauce)
  • 2 tbsp oyster sauce (for the sauce)
  • 2 tbsp Shaoxing wine (for the sauce)
  • 1 tbsp sesame oil (for the sauce)
  • 1 tbsp sugar (for the sauce)
  • white pepper (a pinch, for the sauce)
  • cooking oil (a bit, for the wok)
  • 1 package wide rice noodles (thick rice noodles; package size not specified)
  • 2 cups bean sprouts

Steps

  1. 1

Thinly slice the flank steak and place it in a bowl.

  2. 2

Add the soy sauce, oyster sauce, Shaoxing wine, cornstarch, and baking soda to the steak. Mix thoroughly, then let it marinate for 15 minutes.

  3. 3

While the steak marinates, cut the onion and garlic. Separate the green onion whites from the greens.

  4. 4

In a separate bowl, combine the light soy sauce, dark soy sauce, oyster sauce, Shaoxing wine, sesame oil, sugar, and a pinch of white pepper. Mix the sauce and set it aside.

  5. 5

Heat a bit of cooking oil in a wok until hot.

  6. 6

Add the marinated beef to the wok and sear it on both sides. Remove the beef from the wok.

  7. 7

Add the onion and green onion whites to the wok. Fry for a few minutes.

  8. 8

Add the garlic and grate in the ginger. Cook for a couple more minutes.

  9. 9

Add the wide rice noodles, seared beef, and prepared sauce to the wok. Mix to combine.

  10. 10

Add the bean sprouts and the green onion greens. Mix once more, then serve when done.
